Thumbprint Cookies & Turkey, Ham, and Apricot Paninis

Our new favorite cookies around here are Kate’s  Thumbprint cookies! I used to make these growing up and had a hankering to make them again. I bet you already have most of these ingredients:

  • 1 cup of softened butter (I nuked in the microwave for about 20 seconds)
  • 1/2 cup of sugar
  • 2 egg yolks
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon salt
  • 2 c up of all-purpose flour
  • Preserves, Nutella, basically whatever you feel like
  • 1/2 cup powdered sugar

In your mixer or with a hand mixer, beat the butter/sugar together until creamy.

Wisk your egg yolks and add to the mixing bowl

Then add the salt, vanilla, and slowly the flour, until well combined and it looks like this:

MMMM! (Something about cookie dough….)

Roll into balls (I used a 1 tablespoon cookie scooper), and make indents in the center with your thumb

Add your fillings (I used Nutella and apricot preserves)

Cook at 350 for 12 minutes.  Then once cooled, dust with strainer or sifter with powdered sugar. (I forgot to take a picture b/c I was in a rush to get to a family function, but I made these previously with blackberry jam)

I couldn’t tell you which filling tasted the best, they were all awesome. Make these!

As a family we’ve been busy outdoors doing yard-work, playing basketball, and just plain enjoying this amazing weather. Things have cooled down a bit this weekend, but we can’t complain! It’s only March and we’ve already had spring /summer 😀

Yesterday it wasn’t so nice out though. It was a bit chilly and rainy, and we spent most of the day indoors, doing some chores and just plain relaxing. For lunch, we decided to make Kristen’s Turkey, Ham, and Apricot Panini’s. These did not disappoint. A nice, simple, yet yummy Panini, and sorta springy with the apricot jam.

All you need is some french bread, ham, turkey, swiss cheese, and apricot preserves. Butter outsides of the bread, layer, and cook away on high for about 4 minutes in your panini press.

We used whole grain sandwich bread for El’s, she loved!

I don’t know what we did before we had a Panini press!

El’s napping away, but once she’s up it’s time to get outside and enjoy this surprisingly sunny day! Also feel like I should continue with the spring cleaning theme and clean out our cars… (we’ll see)…. Also, it’s Sean’s b-day tomorrow so El and I will be making him a birthday dinner and cake tonight! 😀 Tomorrow I’ll post about the said cake/dinner and also what we made for dinner last night (Chicken Alfredo Pizza).
