Grilled Balsamic Glazed Chicken

This last week has been BUSY

Tuesday: late night run to Target to buy ingredients for cupcakes (and some other stuff… It’s Target…. 😉 )

Found this shirt for El on clearance for $3, can’t beat that ;D

Wed: Make said cupcakes til 12 AM (Snickerdoodle w/ cream cheese frosting), work friend’s baby shower 😀

Thursday: girls night!

Friday:  Dad night (aka El getting spoiled/eating delicious Chinese food!)

Saturday/Sunday: clean/laundry/park/play date/Target/Home Goods

And Sangria MMMM

And I blinked and it was Monday again…

Well the recipe’s have been piling up due to my lack of blogging. Tonight I will share with you our favorite of the bunch: Grilled Balsamic Glazed Chicken, adapted by Jenna

UNBELIEVABLY EASY

All you need:
2 boneless, skinless chicken breasts
1.5 cups balsamic vinegar
 Two slices of mozzarella 

First marinate your chicken breasts in .5 cup of  balsamic vinegar, for 30 minutes (no longer), in a zip lock bag or air locked container in the fridge.

Then grill um up however you want (I use a George Foreman)

Take the remaining cup of balsamic vinegar and simmer on medium heat for about 15 minutes, til it’s a nice thick delicious glaze.

Turn your oven to broil. Slice two thick pieces (however much you like) of mozzarella, and lay on top of your chicken.

Broil for about 3-5 minutes. Drizzle with the balsamic glaze, and serve with garlic mashed potatoes and steamed green beans.

So flipping good people! And so easy. Sean says these were a 10, and actually wants me to make them for his birthday this month instead of the traditional crab legs/steak. That says something. He also says we need to make 4 next time, 2 for him, and also b/c El loved them! Especially the mashed potatoes 😀

To do list for tonight has been completed. Now it’s time for New Girl & Bethenny Ever After. The couch is calling me…
