Homemade Hot Giardiniera

Sean and I LOVE LOVE LOVE anything spicy. Last year we watched Jeff Mauro’s (last year’s Food Network Star) show where he made Giardiniera. Sean said to me: “You’ve got to make this.” So I finally did šŸ˜€

Homemade Hot Giardiniera

It’s ridiculously easy. First you chop up these veggies:

  • 1 cup small-diced carrots
  • 1 cup tiny cauliflower florets
  • 4 to 8 serrano peppers, sliced (we did 4 but wish we had done 8 šŸ˜‰ )
  • 2Ā cloves garlic, minced
  • 1 stalkĀ celery, diced small
  • 1Ā red bell pepper, diced small

So colorful!

You let them sit in 2 cups of water and 1/4 cup of salt overnight.

The next day we rinsed the veggies off and added:

  • 2 cupsĀ canola oil
  • 1 tablespoon driedĀ oregano
  • 1/2 teaspoon freshly ground black pepper

ThenĀ refrigerateĀ overnight again. I tasted it the next day and it wasĀ definitivelyĀ missing something. After reading the reviews, turns out Jeff left out 1/4 cup of white vinegar which they show him using on the show. So I added the vinegar and let marinate one more night.Ā That did the trick! SOOO good!

We plan to use this on sandwiches and hot dogs over the next few weeks. Absolutely recommend this recipe!
