Delicious Crock Pot Chili

on January 1, 2012

Here is a great fool-proof recipe to kick off the New Year: Crock Pot Chili

  • 1 pound of ground beef, the leaner the better, or you can use ground turkey
  • 1 can 15 oz diced plain tomatoes (chili ready, or petite)
  • 1 can 15 Oz. plain tomato sauce
  • 1 can 15 Oz. dark red kidney beans, fat-free if you can find it
  • 1 can 15 Oz water (from tomato can)
  • 1 teaspoon Worcestershire Sauce
  • 1 stalk celery finely chopped
  • ½ whole yellow onion, finely chopped
  • ½ tbsp fresh garlic, minced (you can also sub with garlic powder)
  • 1-½ tbsp  chili powder
  • 1 teaspoon ground cumin
  • 2 tsp salt, to taste
  • 1/2 tsp pepper, to taste

First in a saute pan on medium heat, brown up the meat with onion, celery, garlic, chili powder, and cumin.

Pour this into your crock pot.

Then add all three cans (do not drain) to the crock pot. Then add the water from the tomato sauce can. Add the Worcestershire sauce and salt and pepper. Mix thoroughly.

Cover this with the lid and cook for on low for 6 hours. Just before serving add any additional salt or pepper to taste.

Sprinkle with some shredded cheddar cheese like we did (you won’t regret it!) This was awesome. We all loved it, especially El.  She is miss picky lately, especially with her 1 year molars coming in!

The next day Sean and I ate salads again for lunch, and the boo enjoyed yet another bowl.

Don’t you just love having delicious leftovers? We are having this for lunch again today.

Check out the breakfast skillet El and I shared this morning.

This was some scrambled eggs with salt/pepper/splash of milk/ feta, topped off with whole grain toast, cherry tomatoes, avocado, and turkey bacon. Just yum. 😀 Great way to start the New Year. Have a good one!
