Sean’s Hawaiian BBQ Kick Pizza

Snow :D. What a great way to wake up. Those are Zo Zo’s paw prints.

Ah a winter wonderland.

So Thursday night before we conked out I made a pizza dough crust for last night’s dinner –Pioneer Woman’s recipe. It’s super simple I highly recommend!


  • 1 teaspoon (SCANT) Active Dry Yeast
  • ¾ cups Warm Water
  • 2 cups All-purpose Flour
  • ¾ teaspoons Kosher Salt
  • 3 Tablespoons Olive Oil

Preparation Instructions

Sprinkle yeast over 3/4 cups warm (not lukewarm) water. Let stand for a few minutes.

In a mixer, combine flour and salt. With the mixer running on low-speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined, and the dough comes together in a sticky mass.

Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours, or store in the fridge until you need it.

Note: it’s best to make the dough at least 24 hours in advance.

I wrapped some saran wrap over this and stuck it in the fridge. We had some fun plans for this… Sean’s vision actually. He wants to call it Hawaiin BBQ Kick Pizza.

Yesterday at work there were too many temptations. We had our work holiday party the day before, and let’s just say there were a ton of leftovers. I nabbed two things (bad Michelle!), a red velvet cookie with cream cheese filling, and a macadamia nut cookie. Worth it!

Then something cool (selfishly cool…) happened. There was a break in the water line at work at about 4:15. Everyone started leaving b/c supposedly they all needed to use the bathroom. So I did what any other employee who was counting down the last hour painfully would do, I booked too!

It was nice beating some of the traffic. Sean, El, and I got an extra half hour of play time before it was time to start cookin. Here she is trying on Daddy’s sandals.

All while munching on some golden grahams. What a cutie pie 😉

Sean had picked up some Coors Light on the way home, and we started sipping while getting to work.

So refreshing! I always stick to 1 beer on Friday nights. Too many carbs. There is just something to that ice-cold beer after a long week though. And w/ pizza on the menu, you just gotta do it.

Our pizza was going to be way to spicy for El. We made her a baby pizza. All I do is take a slice of whole grain bread, toast it, cover in pizza sauce, baby spinach leaves, and mozzarella, and she is good to go!

She loves to tease that Zoe.

She used to thow food down to her, but we put a kibosh on that. So now she just teases her. Poor Zo Zo…

Sean rolled out the dough with a good amount of flour.

While I grilled up two chicken breasts… then tossed them in some Sweet Baby Rays Sweet and Spicy BBQ sauce….. MMMM

And sautéed a red bell pepper in olive oil, salt, pepper, and garlic powder.

Now it’s time to layer this baby up! Some Market Pantry pasta sauce (the tomato, basil and garlic kind)

Then about a half of a bag of Market Pantry low-fat shredded mozzarella cheese and Dole pineapple chunks

Red bell peppers (they had cooked for about 10 minutes)

Then some jarred jalapeno

BBQ chicken

And the rest of that bag of cheese!

In a 475 degree oven for 12 minutes and….

Heaven! This crust just poofed up! I let the yeast activate a bit longer then previous times. Don’t you love when you see your cooking improving?



El totally demolished her baby pizza, (growth spurt much?!), so she had a piece of my crust and tons of feta. Her palate is growing and I am just lovin’ it! I ended up eating 3 pieces. It was that good. Seriously, make this!

For dessert we had to go with something light… I mean, seriously. After all that??? Ah!

It’s a  one ingredient dessert people…  frozen banana!!

All you do is take 3 frozen bananas and stick them in your food processor. It takes awhile, but when it’s done you have freaking banana custard. It’s amazing. No extra sugar, fat, or calories!

Well we weren’t totally innocent. Just a little bit of chocolate syrup will do the trick…

El loves this of course, as she is our little banana nut.

Once she was in bed Sean and nuzzled in to watch the Smurfs. I’d tell you how it was, but I totally konked out halfway through. Def. watching this with El today.

I will tell you this, they explain why Smurfette is the only female smurf.. Uh thank goodness, that has been haunting me for years.

And I gotta love that NPH (Neil Patrick Harris), aka, Doogie, or Barney… is in this movie. Can’t wait to see what happens at the end (well, that is a lie, we did a Smurfs book at work and I already know, but it’s not the same until you see it!)

After sleeping in, we cleaned the house up and down, made Belgian waffles for breakfast…

the missing wedge is for El, although she ended eating 2 wedges… she loves these! Market Pantry Buttermilk waffle mix is the best…

During El’s nap, I got a great workout in on the treadmill. Ran for a solid 20 minute. Much needed after all this food.

And she’s up… time to eat some lunch, play in the snow, and watch us some Smurfs. 😀
