BBQ Chicken and Pineapple Quesadillas

All you need (makes 3)

3 flour tortillas

1 1/2 cups of sliced, grilled chicken breasts

1/2 BBQ sauce (We love Sweet Baby Ray’s Sweet & Spicy)

4 pineapple slices

Shredded cheese (we did a mix of mozzarella & cheddar)

 

We cooked our chicken on our handy-dandy George Foreman Grill. After that we grilled our pineapple

 

Then layer- first tortilla (be sure to use non-stick spray underneath!), then chicken (which we tossed in BBQ sauce), then 2 pineapple slices, then more BBQ sauce, then cheese please!

 

 

 

 

 

 

 

 

Then chop into 4 slices and dip in more BBQ sauce if you like. Sean was worried about the pineapple but ended up loving this. The real key here is grilling the pineapple beforehand!

We then caught up on all our favorite on demand shows and crashed. Good thing we didn’t go to bed too late, El was up at 7 and ready to go. I made up some breakfast burritos, much like the last one’s I made, but was out of potato/green peppers, so we made the Mexican style Scrambled eggs, cheddar cheese, turkey sausage, salsa, and sour cream. Wrap and nuke in the microwave for 45 seconds and you are all set. I forgot to take a pic 😦

Then we hit the yard to rake up all those leaves! We have been waiting for the tree out front to lose all of it leaves (last tree on the block to do this!) El had a blast 😀
