Buffalo Chicken Dip, Spicy Beef Nachos, & Caprese Sandwiches

3 words: Buffalo Chicken Dip

Super easy, and depending on your heat/spice threshold, easy to customize! I like to do a lighter version of this dip, not exactly healthy, but there are def. ways to cut calories here. I got this recipe from my besty 😀

She made this for my baby shower and I was one happy prego!

  • 1 8 oz container of low-fat cream cheese, plain
  • 1/2 cup of light ranch dressing
  • 1/2 cup of Franks buffalo sauce –they have a wide range of spiciness, so you can pick any place from mild to super hot. Also, don’t forget to sign up to print coupons, they have a ton of products to choose  from: Worcestershire sauce, all kinds of mustard, french fried onions, etc. I never buy a bottle w/o first printing a coupon
  • 2 cups of diced cooked chicken (you can use a roasted chicken from the store, or grill up a couple of chicken breasts with some olive oil, salt, and pepper)
  • 1 bag of shredded mozzarella
  • Whole grain pita chips for dipping
  • Sliced veggies (I love to use cucumber!)

Pre-heat your oven to 325

Spread your cream cheese at the bottom of your baking dish. Then mix together in a bowl your chicken, ranch, and hot sauce. Spread mixture over cream cheese. Then sprinkle the bag of mozzarella over the top. Pop in for 20-25 minutes. Serve hot!

This is pure heaven. I am not lying when I say the cucumber was even better then the pita chips in this dip. So good!

3 more words: Spicy Beef Nachos


  • 1 pound of ground beef, lean
  • Taco seasoning
  • Jarred jalapeno (optional)
  • Salsa (in our case, spicy)
  • Low-fat sour cream
  • 1 bag of mixed Mexican blend cheese, low-fat
  • 1 bag of corn chips (we love Archer Farms Organic White Corn Chips)

Pre-heat oven to 350. Layer chips on a baking sheet lined w/ foil (for easy clean up!)

Cook your beef on the stove top til all brown, then add taco seasoning (cook to package dx)

Layer beef over nachos. Then add your cheese. Cook in the oven for 5 minutos.

Then add your toppings (so many options out there, but we chose salsa, sour cream, and jalapeno.

Enjoy!

These two recipes rally are more like for Sean & Michelle’s Kitchen! El is so not eating this stuff! Don’t worry, she enjoyed a baby pizza on one of these nights, and alfredo & peas pasta on the other.

She is doing the Live Long and Prosper sign. 🙂

(baby pizza recipe is SIMPLE- whole grain bread, topped w/ pizza sauce or marinara sauce, baby spinach leaves, and shredded mozzarella, toasted in the oven at 350 for 5 minutes, or nuked in the microwave for about a minute)

Oh and I saved the best for last… Caprese Sandwiches

You’ll need:

  • Ciabatta bread
  • Sliced tomato
  • Ball of low-fat mozzarella
  • Fresh basil
  • Baby spinach
  • Balsamic Vinegar
  • Olive Oil
  • Salt & Pepper

Slice your bread, and layer the tomato, cheese, basil, and spinach. Between layers, sprinkle salt/pepper/olive oil. Layer however many times you like 🙂

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

When you are done layering, splash some balsamic vinegar on there. Pop in the oven (broil for 5 minutes), or even make these a Panini in your Panini press

Delish!

For dessert, a 6 oz container of Skinny Cow Strawberry Cheesecake Ice Cream (Free at target w/ purchase of 4 lean pockets!)

This was really good, and love the portion control you get here!

I just heard from Sean that it is snowing in Woodhull, which means it’ll be snowing in Chicago in a few hours! Ah!

And in some great news, getting Chipotle w/ some co-workers at lunch. That almost make it OK that it might snow today (well… actually no…!) 😦
