Little Miss Minnie Mouse

on October 30, 2011

This has been a great weekend. Thursday night my Dad came over and per usual, loaded us up with some yummy foods: mini-watermelon, bananas (had some baby sized ones for El!), blueberries, Pink Lady apples, and pumpkin pie.

El has been loving bananas so much we have been calling her out little monkey πŸ˜€

We chowed on some Chinese: Chicken fried rice; crab rangoon; sesame chicken; chicken lo mein; vegetable egg rolls. I could not give El greasy Chinese, so she had white sticky rice with some steamed veggies I cooked up: peas, carrots; green beans; and corn. I didn’t realize how much this boo loves rice. It was hilarious to watch, she was eating it by the fistful!

Grandpa also got her first Barbies! Milestone! Disney Princess ballerinas!

We had a repeat buffalo chicken salad night on Friday

And on Saturday I cooked up some roast beef and mashed potatoes.

Homemade mashed potatoes recipe:

6 potatoes (I used red), peeled and cubed

1 cup of warm milk

1/3 cup of butter/margarine

1 teaspoon of salt

Cover cubed potatoes in water, cover, and bring to a boil. Once boiling lower temperature and cook 20-25 minutes. Drain well. Add milk, butter, and salt. Mash (I love my new OXO potato masher)

Sean had cut the roast this time, super thin. This was the most tender and delicious roast beef to date. It literally melted in your mouth. We just gobbled some up for lunch and it was even better then last night.

Elizabeth LOVED the poatoes and sauce. I have the best feeling when my baby loves her food!

After El was in bed, we caught up on Two and a Half Men on demand. We love this show so much more now with Ashton.

In the spirit of Halloween we have been watching Season 1 of The Walking Dead series. Holy cow this show is hard to stomach. The acting is phenomenal though. Def. recommend!
